Picking your three cheeses
Aim for variety: one soft (brie, goat cheese), one firm (cheddar, gouda), and one bold (blue cheese, aged parmesan). Different textures and intensities keep the board interesting from the first bite to the last.
The extras that make it feel finished
A jam or honey for sweetness, nuts or crackers for crunch, and something salty like cured meat or olives rounds things out. These are what make a board feel intentional rather than just "cheese on a plate."
What to pour alongside it
A board with this much variety needs a wine that can flex. A medium-bodied red like Pinot Noir or a crisp white like Sauvignon Blanc both work across softer and firmer cheeses without clashing with any one element.
Assembly tip
Place the cheeses first, spaced apart, then fill in the gaps with everything else. It always looks more put-together when the cheese goes down before the extras.
